Chicken and rice sausage with carrot and almond slaw
This is a simple and healthy low fat meal with no fuss and little clean up. Experiment with the herbs if you like and substitute turkey or fish as alternative. Serve hot or cold, with relish or mayonnaise.
Green curry roast chicken with coconut and chili
This dish is great for summer and can also be done on the BBQ. It has a Thai inspired marinate which keeps the chicken really moist with wonderful lime leaves, lemongrass and coconut flavours. If you’re not into hot food you can adjust the chilli.
