Melbourne International Flower & Garden Show

Wednesday 28 March to Saturday 1 April

As a chef I have the amazing opportunity to travel all over our beautiful country and this month is no exception. April takes me to the beautiful Carlton gardens surrounding Melbourne Royal Exhibition Building for Melbourne’s International Flower and Garden Show where I will be demonstrating beautiful seasonal recipes complimented by Lindeman’s wines. I also love to give out great tips for cooking up your gardens harvest and how to make the most of your baskets full of produce. This month’s featured recipe is my delicious recipe for fried tomatoes below, this dish makes a great starter, side dish or light lunch teemed with some cooked chicken or seared salmon. 1770 Agnes Waters - Queensland Rail

Departs 12 April

Feel like a casual, relaxing train trip enjoying some of our scenic coast line, local wines and a delicious menu of oysters, tiger prawns, wagyu beef carpaccio with organic olives, endive and lemon and mint mayonnaise, followed by confit duck, grappa and pistachio ravioli, and seared tuna with speck, parmesan and fennel…..almost tempted, then we finish with a zabaglione, amaretti and brandied prune semifreddo – a favourite from my cook book. If you need a relaxing break away from driving, busy airplane terminals and want to be taken on a journey, join me and check out the link below for Queensland Rail’s Sunlander trip from 1770 to Brisbane.More info.

If writing and chatting about food is something more your style you might like to head out to South Western Queensland and join me in Gatton, Laidley and Esk for Queensland Writers Centre’s – Food Tales. I will be conducting several community food writing workshops titled ‘’Cooking Up Memories’’. February 2012

The featured event for this month is in Wagga Wagga the largest inland City in NSW nestled on the banks of the magnificent Murrumbidgee River, with a population of about 60,0000 people. It is the "capital" of the Riverina Region and the major support city for some 200,000 people who live and work in the rich southern agricultural area of the State. To the west lies Griffith, the heart of New South Wales’ biggest wine producing region. The Riverina is one of the most productive and diverse agricultural regions in the country, giving rise to their claim as the “food bowl of Australia”. Located in southern New South Wales, the Riverina extends from the rolling foothills of the south-west slopes to the outback.
